Thanksgiving Desserts

Wow- time really has flown by! I can't believe the last post was 2 months ago. Things have been a little crazy but Thanksgiving is a great time to stop and reflect on all the things in your life to be grateful for. I'ts also a great time to eat some yummy desserts!

Mexican Cheezecake Squares- vegan of course!

When I saw this recipe I thought they would be good- but I was wrong.

They are AMAZINGLY DELICIOUS!

They are so simple to make!  And they will disappear like magic.

Vegan Brunch!

Labor Day Brunch! After our usual morning walk the girls came over for brunch- muffins, orange slices with agave, spicy fried potatoes, tofu scramble and vegan sausage.

And don't forget the grapefruit mimosas! They were sooooo good!
1 cup grapefruit juice
6 T triple sec
fill glass halfway with juice mix, then the other half with champagne. These were amazing.
Blueberry muffins and raisin bran muffins
two of the hubbys even showed up!
A great end to the holiday weekend.

Getting creative with leftovers

After the dinner party last week I had a few graham cracker crusts leftover as well as some of the mousse filling from the mini mousse cakes. Here is what I ended up with~

Dinner Party Pics

So last week was great! I got an email from my friend who is a vegan personal chef and he was doing a dinner party and needed some desserts~
Not too creative, cause time was kind of tight but I thought they came out okay.

First up were my mini carrot cakes~ I love how moist these come out and they are so cute! 

Then I made mini key lime-avocado pies. Minor problem with these so had to improvise.

The lemon bars kept sucking up the powdered sugar topping
but there was extra to sprinkle just before serving.


And the mini mousse cakes- you've seen them before but here's another blurry picture~



This was so much fun! I need to get pastry rings so the stacks come out even. Has anyone used them before? What do you think of them?

Market Day Photos!

As some of you in Northeast Ohio know, I have a little bakery stand at the Geauga Farmer's Market. Last weekend was a sellout! Thanks to everyone who stopped by for goodies. The pic above was at 8:30 AM (the market goes from 9AM-1PM). And below is another at 12:30 - two lonely scones left- but not for long!

Key Lime Tarts

Isa to the rescue! I got a call for an order of key lime tarts. Not only had I never made them before, but I had never tasted key lime pie. But I said no problem to 4 dozen tarts and did a recipe search for vegan key lime pie. Post Punk Kitchen's Facebook page had this recipe for Latchkey Lime Pie. Delish!

Market Day!

Mother's Day Pie - Strawberry Rhubarb

I had never tasted let alone baked a strawberry rhubarb pie- but wanted to surprise mom for mother's day. After researching a few recipes- I had a plan. Here are the raw rhubarb and berries. Then a nice lattice top-easier than it looks!

This was so much better than I ever imagined it would be! Who knew? Now I do.

Triple Coconut Cheezecake Minis


These are adapted from Robin Robertson's "1,000 Vegan Recipes". If you love coconut these are for you. Toasted coconut in the crust, creme of coconut and coconut extract in the cheezecake and more toasted coconut on top!

Nacho Muffins

Sometimes all I want for dinner is a plate of nachos:

Chips, queso (vegan of course), tomato, cilantro, black olives and avocado.


The queso is from Crystal http://www.veganexplosion.com/ and it is spicy and cheezy and gooey!


But then it got me thinking - hmmm, what about a nacho muffin?


It's got a slightly spicy cheeziness, olives, cilantro and some rotel diced tomato and chiles. If I can work in the avocado it will be even better!

It was even better because of the ratio of mousse to cake- unfortunately the only pic I got a chance to take is blurry.

Mini Mousse Cakes

Not Minnie Mouse Cakes! Mini as in little. Mousse as in fluffy pudding. Cake - you know cake, right?
On Food Network the other night, on The Best Thing I Ever Ate there was a 20 layer chocolate mousse cake. That sounded really good, but I didn't want to make a huge cake.

See how tiny? That's 1/4 of a cake.
